Canada makes more maple syrup than any other country. In 2025, 90% of its syrup came from Quebec. The province keeps extra syrup for times when farms make less. The group Quebec Maple Syrup Producers manages this supply. It expects the supply to run out by February.
In 2025, Americans rushed to buy Canadian syrup. They wanted to buy before President Donald Trump’s expected new taxes on goods from other countries. Canada sold nearly 16% more syrup to other countries that year. But it made 5% less syrup. Weather has a big effect on how much syrup farms can make. Without the extra supply, Quebec cannot use stored syrup to help when farms make less.
Simon Doré-Ouellet, a leader at the group, says there is enough syrup for the coming year. But Quebec needs to build up its extra supply again over the next few years. The province has increased its syrup production capacity by 50% in six years. It has more than 21 million new places to collect liquid from maple trees. A good season in 2027 could help, but the weather remains outside producers’ control.
