Airlines Look to Celebrity Chefs for a Faster Premium Makeover

With new premium seating taking years to develop and install, airlines are turning to chef-led menus as a more flexible way to distinguish their service and attract high-spending travelers.

Airlines are increasingly enlisting celebrity chefs to refresh their premium cabins, improving the dining experience without replacing the seats. The contrast in development timelines makes the approach attractive: new business- and first-class products can require years of design, certification, and installation, whereas menus can be revised within months. Dining therefore offers carriers a comparatively flexible way to update one element of premium travel while leaving the seating unchanged. Rather than depending entirely on a new cabin product, airlines can introduce changes through what they serve onboard.

The strategy is part of the competition for high-yield passengers—travelers who generate more revenue for airlines. By partnering with award-winning chefs, carriers can draw on established culinary reputations while distinguishing their premium offering from those of competitors. The chef’s reputation becomes part of the dining proposition, alongside the refreshed menu itself. Although these collaborations are not a recent invention, they are becoming an increasingly recognizable feature of high-end airlines. Food provides a route to differentiation on a shorter timetable than the development and installation of new seating.

Singapore Airlines illustrates the longer history behind this approach. Its Book the Cook program, introduced in 1998, allows premium-cabin passengers to select meals before departure. Those meals are curated by the airline’s International Culinary Panel. The program combines advance ordering with meals curated by the panel, providing an established example of how airlines incorporate culinary expertise into the premium passenger experience.
