Mongolian chicken has very little to do with Mongolia. The story of its name starts with Wu Zhaonan. He came from Beijing. He made people laugh for his work. During China's civil war, he left China for Taiwan. In 1951, he opened a food stall in Taipei.
Wu cooked his dish on a flat, hot surface. He wanted to call it “Peking barbecue,” after his home city. Peking is another name for Beijing. But Beijing had just become the capital of Communist China.
